Upscale toaster oven baking dish, April 19, 2012 By z_bookworm (Westchester County, NY) - See all my reviews This review is from: Pillivuyt Eden Square Roaster/Baker Small, 6.5 x 6.5 Inches, 1 Quart Capacity (Kitchen) If you have a one or two person household as I do, there are many times when you'd rather use your small footprint 4-slice toaster oven, rather than turning on the full-size oven. But it is hard to find acceptable bakeware for it. The cheap Teflon over aluminum that is sold for the purpose seems dangerously poisonous and isn't durable. You can go against the mfr. of Pyrex's recommendations and use that in the toaster oven, but you are risking it shattering explosively. The mfrs. of Pillivuyt are able to say that their top-quality porcelain withstands heating under a broiler or even on the stovetop w/ a diffuser (in other words near direct heat), making it safe for the toaster oven. And it is just as low stick as Pyrex.
I find this size is perfect for a 1/2 recipe of brownies or cake. When you cook in the toaster oven, you have to protect your food from the top elements by covering loosely w/ foil for the first 3/4 of the cook time, then take it off to brown the top... Read more
